			<content:encoded><![CDATA[<p>It&#8217;s uncharacteristically quiet here right now.  With lots of extra space at the breakfast table and only four eggs in the frying pan, it&#8217;s back to the way things were before we discovered the many joys of the WWOOF program.</p>
<p>Our most recent visiting volunteers left just over a week ago and the next one isn&#8217;t scheduled to arrive for another two weeks.  While it is nice to have a break and enjoy the house to ourselves for a spell, to be honest, it&#8217;s a little eerie, all this quiet.</p>
<p>(As I typed that, our three year old sent a stack of blocks cascading onto the floor next to me.  Quiet, like so many things, is relative.)</p>
<p>Since our membership as WWOOF hosts started in January of this year we have had something like 25 weeks of help between all our visitors.</p>
<p><img class="aligncenter size-medium wp-image-335" title="p1010162" src="http://jcnymanfarms.files.wordpress.com/2009/04/p1010162.jpg?w=300&#038;h=225" alt="p1010162" width="300" height="225" />We&#8217;ve had two people from Korea, two from Japan, two from the US and one from England.  Our next guest will be from the US.</p>
<p>For my part, I&#8217;m taking some of this down time to reflect on how we&#8217;ve done as hosts so far.  There is a responsibility to create an enjoyable environment for people who are volunteering on your farm, after all.</p>
<p>How could we improve the accommodations, the work environment?  How well have we managed the energy of our home where the pressures of farming, working full time, parenting and relationships can cause tension?</p>
<p>How well have we balanced getting all the farm work done with showing our visitors what a great part of the country we live in?  Because, that is a big part of why a lot of people join the WWOOF program in the first place.  It is a great way to travel without a lot of expense.</p>
<p>So, with thanks for all the help and company we&#8217;ve had; and with appreciation for getting to travel vicariously to the places our guests have been, I am reveling in the quiet and knowing I&#8217;ll be happy when it&#8217;s back to a crowed mealtime.  And making notes about what worked so I can do more of it.</p>

<p>Makes four fajitas</p>

<ul>
<li>Fast Fry Steak</li>
<li>Grated or chopped cheese of your choice</li>
<li>1 tablespoon ground cumin</li>
<li>1 tablespoon chile powder</li>
<li>3/4 teaspoon black pepper</li>
<li>3/4 teaspoon cayenne</li>
<li>1 1/2 teaspoons salt</li>
<li>Cooking oil</li>
<li>1 heart of romaine</li>
<li>2 firm-ripe avocados (8 to 10 oz each)</li>
<li>12 (6-inch) flour tortillas (not low-fat)</li>
<li>1 cup loosely packed fresh cilantro sprigs</li>
</ul>
<p>So, that&#8217;s the list that I got with the recipe but a Fajitas is like a Taco.  Add what you like.  Don&#8217;t add what you don&#8217;t like.  I have to say, your can go the safe route and add, Mozzarella, Cheddar or the like but I would suggest that getting a little wild with the cheese choice will pay in great flavour.  Brie, anyone?</p>
<p><strong>Preparation:</strong></p>
<p>Slice Fast Fry Steaks into roughly two inch by half inch strips cutting across the grain.</p>
<p>Heat a well-seasoned frying pan (preferably cast-iron) over moderately high heat.</p>
<p>While pan heats, stir together spices and salt in a medium bowl.  Add enough oil to make a runny paste.  Add steak pieces and toss.</p>
<p>Fry steak, stirring once, until just done. Transfer to a cutting board and let stand 10 minutes.</p>
<p>Meanwhile, cut romaine crosswise into thin shreds. Quarter avocados lengthwise, then pit, peel, and cut lengthwise into 1/4-inch-thick slices.</p>
<p>Stack tortillas, wrapped completely in dampened paper towels, on a microwave-safe plate and cook in a microwave oven at high power (100 percent) until tortillas are hot, about 1 1/2 minutes.</p>
<p>Serve with tortillas, avocado, romaine, and cilantro.   Personally, I like to put the fajitas together and warm the whole thing in a baking dish in the oven until the cheese melts.  Yum.</p>
<h1><span style="color:#000080;">Roast Veggie and Sausage Salad</span></h1>
<p>Makes 6 to 8 servings</p>

<ul>
<li>1 head garlic</li>
<li>4 large baking potatoes, preferably red</li>
<li>4 medium carrots</li>
<li>2 parsnips or one small turnip</li>
<li>1 red onion</li>
<li>Canola or olive oil</li>
<li>Pinches of salt and pepper</li>
<li>1 lemon</li>
<li>2tbsp (30 mL) 				Dijon mustard</li>
<li>1/2 jalapeño pepper, seeded and finely chopped, or ½ tsp (2 mL) hot chili flakes</li>
<li>1/3cup (75 mL) 				canola or olive oil</li>
<li>3 sausages</li>
<li>1/3cup (75 mL) 				shredded fresh basil (optional)</li>
</ul>
<div class="recipeIngredients">As usual, use whatever kind of veggies you like.  These are all root vegetables and will cook in roughly the same time.  If you&#8217;d rather use softer veggies like zuccini or bell peppers, you&#8217;ll want to do a long cooking baking dish for the potatoes etc&#8230; and a shorter cooking dish for the tender vegs.</div>
<div class="recipeIngredients">Preparation:</div>

<div class="recipeDescription">Preheat oven to Cut all vegetables (not garlic) into bite sized pieces.  Place all in a large bowl. Drizzle with oil. Sprinkle with salt and pepper, then toss.</div>
<div class="recipeDescription">Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 425°F. Oil 2 large rimmed baking sheets or lasagna pans. Divide vegetables between prepared baking sheets. Roast vegetables until tender and brown in spots, turning occasionally, about 50 minutes. (Can be made 4 hours ahead. Let stand at room temperature. If desired, rewarm in 350°F oven about 15 minutes, or microwave on high until heated through, about 6 minutes, before continuing.)</div>
<div class="recipeDescription">For dressing, squeeze juice from lemon into a small bowl. Whisk in Dijon, jalapeño, salt and pepper. Gradually whisk in 1/3 cup (75 mL) oil.</div>
<div class="recipeDescription">While veggies are cooking, grill sausages on a bbq or indoor grill.  (I have been known to do them in the toaster oven).  Once done, thinly slice sausages.  Squeeze garlic from skins onto cutting board. Mash with the flat side of a knife, then whisk into dressing. Drizzle over salad and toss. Sprinkle with basil.</div>
<div class="recipeDescription">While these directions are long, this is a seriously simple meal to make.  Most of the time involved is waiting for the veggies to roast.</div>
<div class="recipeDescription">There.  Now, I&#8217;ll be doing well if I can use both of these recipes sometime before the New Year.</div>

			<content:encoded><![CDATA[<p>Okay, so I&#8217;m sure in the grand scheme of the internet, this is small potatoes.  But to me, it&#8217;s kind of cool.</p>
<p><a href="http://jcnymanfarms.files.wordpress.com/2008/05/fireworks1.jpg"></a>Today, we celebrate our 2000 hit to this website.  Launched January 25, 2008, it&#8217;s been up and running for 102 days.</p>

<p>So, our celebrations might not rival New Years 1999, in fact, they won&#8217;t really happen until tomorrow night when I make strawberry meringues for dessert, but it is significant to us.  It means that people are supporting what we&#8217;re doing.</p>

<p>Is the organic and sustainable food movement complacent about pricing?</p>
<p>Over breakfast, John and I were discussing organic milk.  How we got onto that topic, I don&#8217;t know.  Maybe it was the carton in front of us.  However it came about, our conversation hasn&#8217;t yet left me.  What has caught my attention was something that John read in a newspaper he found at the bottom of our firewood box.  I&#8217;m trying not to dwell on the fact that we&#8217;re still lighting morning fires in May.</p>
<p>This article, possibly a year or more old, left John with a sense that there was soon going to be an oversupply of organic milk in Ontario.  (Having looked into it a bit, there doesn&#8217;t seem to be consensus on this.)  From this jumping off point, we started to speculate what would happen to the price premium and allowance for organic dairy farms to ship more milk than other producers.</p>
<p>(A basic overview of the Milk Quota system:  Farmers purchase units of quota that allows them to ship milk from one cow per unit of quota and be guaranteed a steady price for the milk.  Quota currently costs around $30,000.00 CDN per unit.  Organic farmers get to ship more milk per unit of quota than conventional, giving them more return on investment.)</p>
<p>Presumably, if there were no supply shortage for organic milk, the price would go down for the consumer and the premiums that the dairy farmers are getting would disappear.  In theory, organic milk would cost the same as conventional milk.  As someone who buys organic milk, this would seem strange in a &#8216;Yeah!  The Grocery Bill Fairy has been here!&#8217; kind of way.  I&#8217;m not sure the organic milk producers, who spent the time and energy to struggle through a long and expensive learning curve, would feel the same.</p>
<p>While I don&#8217;t know if this will happen anytime soon, it did bring up the idea that organic producers in general seem to be complacent about price.  If they are concerned about the future of pricing, I&#8217;ve never heard tell.  I have heard some not-certified, sustainable, ethical farmers getting vocal about the true cost of food, but rarely.</p>
<p>And why should they worry?  Organic farmers are getting a premium over conventional farmers for everything from soup to nuts.  Sustainable farmers generally are, as well.  And, while part of the premium they get goes into more costly production in many cases, at least some of the extra cost is a result of an unbalanced supply and demand.  There isn&#8217;t enough to go around, so the price goes up.</p>
<p>This is precisely why we should be concerned.</p>
<p>To think that once supply of &#8216;alternative food&#8217; (I&#8217;m lumping certified organic with sustainable ethical production under that label) catches up with demand, the prices are going to level out somewhere near to conventional produce should strike fear into the hearts of anyone affected.  Sure, in the entire food industry, it doesn&#8217;t seem likely to balance out in the near (or possibly distant) future.  That&#8217;s not the issue.  The problem is that the current price for conventionally produced food doesn&#8217;t represent the cost of production that the farmer bears.  This is why so many farmers work full time off the farm.  Their full time on-farm job doesn&#8217;t make enough to pay even minimum wage.</p>
<p>So, if producing food alternative food is often more expensive for the farmer, you&#8217;d think there would be widespread panic at the thought of prices going <em>down</em> to a level that can&#8217;t sustain those who are there <em>now</em>.  As a producer of non-certified, more organic every year, ethical food, I&#8217;m forever putting energy into educating people about the true cost of food.  I&#8217;m frequently telling people that a wheat farmer makes $0.14 per loaf of bread.</p>
<p>Sure, alternative producers are getting a premium price <em>compared to</em> conventional food prices but try comparing the cost of alternative food against the cost of producing it.  Suddenly, what looked like a tidy income for the farmer looks pretty meager.</p>
<p>And look further to the bargain basement food in our grocery stores.  Somebody want to speculate on what kind of corners have to be cut to get prices that low?  Anyone want to consider the health and animal welfare results of drastically cutting corners on food production?  (Think about what has to happen in to production phase of cheap clothes and the level of quality that results and you&#8217;ll have a fair parallel, I&#8217;d say.)</p>
<p>So, yes, I&#8217;d say the alternative food producers are somewhat complacent.  To be happy with prices inflated by a supply and demand discrepancy is like driving in the dark with your lights off.  You might be cruising along now but you won&#8217;t see the &#8216;Bridge Out&#8217; sign until you&#8217;re in the drink.</p>
<p>At some point, supply of good clean food will match demand.  Ideally, by then, consumers will be aware that, though they thought they were paying premium will realize that what they were really doing was meeting cost of production.  <em>Including </em>a wage for the farmer.  Sounds reasonable to me.</p>
